Pumpkin Recipes


Pumpkin carving is lots of fun but did you know it can be an excellent healthy snack too. Pumpkins are an antioxidant and an anti inflammatory food! This means it helps with joint health, organ health, stress relief and soft tissue injuries! The high levels of Vitamin C help the immune system and encourages collagen production for the skin to maintain its beautiful glow and elasticity. Pumpkin seeds are high in protein and plant based fatty acids, which help regulate cholesterol levels, protect against arthritis, promote healthy skin, and improve brain function.

Pumpkin Bread

2/3 cup shortening

2 1/2 cups sugar

4 eggs

1 can pumpkin

2/3 cups water

3 1/3 cup all purpose flour

1 tsp baking soda

1 tsp ground cinnamon

1/2 tsp baking powder

1/2 tsp salt

1/8 tsp nutmeg

2/3 cup of chopped pecans or walnuts

Method: In a large bowl, cream shortening and sugar. Beat in the eggs, pumpkin and water. Combine dry ingredients and beat into pumpkin mixture until well blended. Stir in nuts.

Put mixture in two greased loaf pans. Bake 350 degrees for 55-65 minutes or until a toothpick inserted near the center comes out clean.
